  1. 1. Bring water, beer, ghee, salt, and sugar to a boil in a pot. Add the flour all at once and stir smoothly with a cooking spoon. Let the dough cook down on the stovetop while stirring constantly until a thin crust forms on the bottom of the pot.
  2. 2. Transfer the dough to a metal bowl. Incorporate the eggs one by one, preferably using a hand mixer with dough hooks. Stir the dough until smooth and shiny. Let the dough cool down completely.
  3. 3. Heat the ghee in a large pot.
  4. 4. For the sauce, dice four strawberries into small cubes. Blend the remaining strawberries with lemon zest and sugar until the sugar dissolves. Add some white wine if desired. Garnish the sauce with the strawberry cubes.
  5. 5. The fat is ready when small bubbles form around the handle of a wooden cooking spoon held in the fat.
  6. 6. Fill the dough into a piping bag with a star tip. Pipe the dough in a spiral into the hot fat and bake until golden brown. Turn the krapfen once if necessary.
  7. 7. Always check the fat temperature. If it is too hot, the krapfen will turn black outside and remain raw inside. Reduce the heat or add some cold fat if necessary. Ensure there is enough fat for the krapfen to float.
  8. 8. Let the finished krapfen drain and cool on a rack with kitchen paper. Dust them generously with powdered sugar.
