  1. 1. Dissolve the yeast and sugar in the lukewarm milk.
  2. 2. Add the flour, egg yolks, butter, a pinch of salt, and the lemon zest.
  3. 3. Combine the ingredients using the dough hook to form a soft dough.
  4. 4. Knead the dough until it pulls away from the sides of the bowl.
  5. 5. Cover the bowl and place it in a warm spot.
  6. 6. Wait until the dough has doubled in volume.
  7. 7. Turn the dough out onto a lightly floured surface.
  8. 8. Knead the dough firmly.
  9. 9. Divide the dough into two halves.
  10. 10. Shape the halves into long rolls.
  11. 11. Cut each roll into six equal pieces.
  12. 12. Roll the pieces into smooth balls.
  13. 13. Place the balls on a cloth.
  14. 14. Let the krapfen rise in a warm spot for about 30 minutes.
  15. 15. Heat oil or fat in a deep pot to about 180 degrees Celsius.
  16. 16. Place the dough balls in batches into the hot fat.
  17. 17. Place the balls with the smooth side facing down into the fat.
  18. 18. Fry the krapfen until the bottom is golden brown.
  19. 19. Carefully turn the krapfen.
  20. 20. Fry the other side until golden brown as well.
  21. 21. Remove the finished krapfen from the fat using a slotted spoon.
  22. 22. Place them on kitchen paper to drain excess oil.
  23. 23. Let the krapfen cool down slightly.
  24. 24. Fill a piping bag with a long, thin nozzle with jam.
  25. 25. Inject the jam into the krapfen.
  26. 26. Mix powdered sugar with a little water to create a thick glaze.
  27. 27. Brush the glaze over half of the krapfen.
  28. 28. Simply dust the other half with powdered sugar.
  29. 29. Optionally decorate the glazed krapfen with melted dark chocolate and sugar pearls.
  30. 30. Optionally drizzle the unglazed krapfen with melted white chocolate.
