🍽️ Fluffy Yeast Krapfen with Jam

Ingredients
- 500 g Flour
- 1 Fresh yeast (42 g)
- 200 g lukewarm milk
- 50 g Sugar
- 5 Egg yolks
- 60 g soft butter
- 1 Pinch Salt
- 1 tsp grated lemon zest
- Flour (for shaping and work surface)
- Jam (to taste for filling)
- 1.5 l Oil (for deep frying)
- Icing sugar (for glaze and dusting)
- Sugar pearls
- white dark chocolate
Instructions
- 1. Dissolve the yeast and sugar in the lukewarm milk.
- 2. Add the flour, egg yolks, butter, a pinch of salt, and the lemon zest.
- 3. Combine the ingredients using the dough hook to form a soft dough.
- 4. Knead the dough until it pulls away from the sides of the bowl.
- 5. Cover the bowl and place it in a warm spot.
- 6. Wait until the dough has doubled in volume.
- 7. Turn the dough out onto a lightly floured surface.
- 8. Knead the dough firmly.
- 9. Divide the dough into two halves.
- 10. Shape the halves into long rolls.
- 11. Cut each roll into six equal pieces.
- 12. Roll the pieces into smooth balls.
- 13. Place the balls on a cloth.
- 14. Let the krapfen rise in a warm spot for about 30 minutes.
- 15. Heat oil or fat in a deep pot to about 180 degrees Celsius.
- 16. Place the dough balls in batches into the hot fat.
- 17. Place the balls with the smooth side facing down into the fat.
- 18. Fry the krapfen until the bottom is golden brown.
- 19. Carefully turn the krapfen.
- 20. Fry the other side until golden brown as well.
- 21. Remove the finished krapfen from the fat using a slotted spoon.
- 22. Place them on kitchen paper to drain excess oil.
- 23. Let the krapfen cool down slightly.
- 24. Fill a piping bag with a long, thin nozzle with jam.
- 25. Inject the jam into the krapfen.
- 26. Mix powdered sugar with a little water to create a thick glaze.
- 27. Brush the glaze over half of the krapfen.
- 28. Simply dust the other half with powdered sugar.
- 29. Optionally decorate the glazed krapfen with melted dark chocolate and sugar pearls.
- 30. Optionally drizzle the unglazed krapfen with melted white chocolate.
