  1. 1. Heat a large pan over medium heat and add the butter.
  2. 2. Peel the onion and cut it into very small cubes.
  3. 3. Add the onion cubes to the hot butter and sauté them briefly until they are soft and translucent.
  4. 4. Sprinkle the flour over the onions and stir until the mixture turns golden yellow.
  5. 5. Slowly pour in the milk and vegetable broth while stirring constantly.
  6. 6. Bring the soup to a brief boil and keep stirring until the sauce is smooth and creamy.
  7. 7. Reduce the heat and let the soup simmer gently for about 10 minutes, stirring occasionally.
  8. 8. Rinse the fresh herbs under running water and pat them dry with a kitchen towel.
  9. 9. Set aside a few small herb leaves and daisies for decoration.
  10. 10. Chop the rest of the herbs roughly.
  11. 11. Add the chopped herbs and sour cream to the hot soup.
  12. 12. Blend the soup smooth with a hand blender.
  13. 13. If the soup is too thick, stir in a little more broth, but do not let it boil again.
  14. 14. Finally, season the soup to taste with salt, pepper, and a squeeze of lemon juice.
