🍽️ Fresh Herb Soup with Daisies

Ingredients
- 1 onion
- 30 g butter
- 2 tbsp flour
- 200 ml milk
- 600 ml meat broth
- 100 g herbs (e.g. dill, chervil, comfrey, ground elder, plantain)
- 100 g sour cream
- salt
- pepper (from the mill)
- 1 dash lemon juice
- buttercup flowers (for garnishing)
Instructions
- 1. Heat a large pan over medium heat and add the butter.
- 2. Peel the onion and cut it into very small cubes.
- 3. Add the onion cubes to the hot butter and sauté them briefly until they are soft and translucent.
- 4. Sprinkle the flour over the onions and stir until the mixture turns golden yellow.
- 5. Slowly pour in the milk and vegetable broth while stirring constantly.
- 6. Bring the soup to a brief boil and keep stirring until the sauce is smooth and creamy.
- 7. Reduce the heat and let the soup simmer gently for about 10 minutes, stirring occasionally.
- 8. Rinse the fresh herbs under running water and pat them dry with a kitchen towel.
- 9. Set aside a few small herb leaves and daisies for decoration.
- 10. Chop the rest of the herbs roughly.
- 11. Add the chopped herbs and sour cream to the hot soup.
- 12. Blend the soup smooth with a hand blender.
- 13. If the soup is too thick, stir in a little more broth, but do not let it boil again.
- 14. Finally, season the soup to taste with salt, pepper, and a squeeze of lemon juice.
- 15. Divide the hot soup among the plates.
- 16. Garnish each portion with the reserved herbs and daisies.
- 17. Serve the soup immediately while hot.
