🍽️ Fresh Herb Sauce

Ingredients
- 1 onion
- 2 garlic cloves
- 1 green chili pepper
- 100 ml olive oil
- 150 ml vegetable broth
- 2 handfuls mixed herbs (e.g. chervil, parsley, cilantro)
- 1 tbsp hot mustard
- salt
Instructions
- 1. Peel the onion and garlic and cut them into small cubes.
- 2. Wash the chili pepper, remove the stems, and chop it very finely.
- 3. Heat 2 tablespoons of oil in a pan and sauté the onions, garlic, and chili for about 2 minutes until they are soft and translucent.
- 4. Pour in the broth and bring the mixture to a boil.
- 5. Remove the pan from the heat and let the sauce cool down completely.
- 6. Rinse the herbs briefly under cold water and shake them dry.
- 7. Chop the herbs coarsely.
- 8. Add the chopped herbs and mustard to the cooled broth.
- 9. Blend the mixture finely using a hand blender.
- 10. Slowly pour the remaining oil into the sauce while blending.
- 11. Season the sauce to taste with salt.
- 12. Fill the finished sauce into a clean jar.
