🍽️ Fresh Herb Mustard

Ingredients
- 120 g mustard seeds
- 6 tbsp water
- 125 g white wine vinegar
- 1 tbsp balsamic vinegar
- 1 tsp salt
- 2 tsp sugar
- 2 tbsp parsley
- 3 tbsp vegetable oil
Instructions
- 1. Grind the mustard seeds in the blender as finely as possible. Stir the flour with the water and let the mixture swell.
- 2. Heat both types of vinegar, the salt, and the sugar. Let the mixture cool down and stir it into the mustard paste. Add the oil drop by drop and keep stirring until the mustard becomes creamy.
- 3. Grind the parsley smooth in a mortar and stir it into the mustard. Fill the mustard into screw-top jars and store them in a cool place so they last a long time.
