🍽️ Fresh Herb Sauce

Ingredients
- 2 shallots
- 1 tbsp butter
- 125 ml white wine
- 500 ml vegetable broth
- light sauce thickener
- 3 tbsp crème fraîche
- 3 tbsp finely chopped herbs (chervil, chives, parsley)
- salt
- pepper (from the mill)
- 1 untreated lemon peel (fine strips)
Instructions
- 1. Peel the shallots and cut them into very small cubes.
- 2. Heat butter in a pan and sauté the shallots until they are soft and translucent.
- 3. Deglaze the pan with wine and broth.
- 4. Let the liquid reduce over high heat for about five minutes until it thickens slightly.
- 5. Optionally add a little thickener if you prefer a thicker sauce.
- 6. Stir the herbs and crème fraîche into the sauce.
- 7. Season the sauce to taste with salt and pepper.
- 8. Sprinkle the finished sauce with lemon zest and serve.
