  1. 1. Peel the shallots and cut them into very small cubes.
  2. 2. Heat butter in a pan and sauté the shallots until they are soft and translucent.
  3. 3. Deglaze the pan with wine and broth.
  4. 4. Let the liquid reduce over high heat for about five minutes until it thickens slightly.
  5. 5. Optionally add a little thickener if you prefer a thicker sauce.
  6. 6. Stir the herbs and crème fraîche into the sauce.
  7. 7. Season the sauce to taste with salt and pepper.
  8. 8. Sprinkle the finished sauce with lemon zest and serve.
