🍽️ Fresh Mint Herb Juice

Ingredients
- 1 handful young spinach
- 1 handful chervil
- 1 handful young radish leaves
- 2 sprigs mint
- 2 tbsp lemon juice
- soda water to top up (still)
- 100 ml kefir
- salt
- Tabasco
Instructions
- 1. Rinse the spinach, chervil, radish leaves, and mint under running water.
- 2. Let the vegetables and herbs drain well.
- 3. Set aside a few nice mint leaves for decoration.
- 4. Roughly chop the remaining spinach, chervil, radish leaves, and mint.
- 5. Place the chopped ingredients, lemon juice, 100 milliliters of cold water, and kefir into a blender.
- 6. Blend the mixture in the blender until it is fine and smooth.
- 7. Pour the juice through a fine sieve to remove coarse fibers.
- 8. Season the juice to taste with salt and Tabasco.
- 9. Fill the juice into glasses.
- 10. Top up each glass with cold water until full.
- 11. Garnish the glasses with the reserved mint leaves.
- 12. Serve the juice cold.
