🍽️ Fresh Herb Dressing with Egg

Ingredients
- 1 hard-boiled egg
- 1 small shallot
- 6 tbsp olive oil
- 3 tbsp white wine vinegar
- salt
- pepper (from the mill)
- 2 tbsp freshly chopped herbs (e.g. parsley, chives, tarragon, chervil, basil)
Instructions
- 1. Boil the egg until hard-boiled (approx. 8-10 minutes).
- 2. Let the egg cool down and peel it carefully.
- 3. Chop the cooked egg into very small pieces.
- 4. Peel the shallot and cut it into tiny cubes.
- 5. Mix the oil and vinegar in a bowl.
- 6. Season the mixture with salt and pepper to taste.
- 7. Add the fresh herbs, shallot cubes, and chopped egg.
- 8. Stir everything well until evenly combined.
- 9. Taste the dressing and serve it immediately.
