🍽️ Creamy Herb Soup with Salmon Spirals

Ingredients
- 1 onion
- 2 tsp butter
- 2 potatoes (, waxy)
- 600 ml clear broth (instant)
- 1 bunch parsley
- basil
- 150 ml whipping cream
- salt
- pepper from the mill

- 200 g slices of marinated salmon (2 slices of marinated salmon)
Instructions
- 1. Rinse the herbs under cold water.
- 2. Shake the herbs dry.
- 3. Chop the herbs finely.
- 4. Season the herbs with pepper.
- 5. Spread the herb mixture evenly over the salmon pieces.
- 6. Roll the salmon tightly.
- 7. Wrap the salmon in plastic wrap.
- 8. Place the salmon in the refrigerator for 30 minutes.
- 9. Peel the onion.
- 10. Cut the onion into small cubes.
- 11. Heat the butter in a large pot.
- 12. Sauté the onions until they are soft and translucent.
- 13. Peel the potatoes.
- 14. Wash the potatoes.
- 15. Cut the potatoes into cubes.
- 16. Add the potatoes to the onions.
- 17. Cook the potatoes briefly.
- 18. Pour in the vegetable broth.
- 19. Cover the pot.
- 20. Boil everything for 25 minutes.
- 21. Rinse the herbs again.
- 22. Set aside some basil leaves for decoration.
- 23. Chop the rest of the herbs.
- 24. Puree the potatoes directly in the broth.
- 25. Stir in the chopped herbs and the cream.
- 26. Mix the soup vigorously.
- 27. Season the soup with salt and pepper.
- 28. Remove the salmon from the foil.
- 29. Slice the salmon.
- 30. Serve the soup.
- 31. Place the salmon slices on top.
- 32. Garnish the soup with the basil leaves.
