  1. 1. Pour the flour into a large bowl.
  2. 2. Make a well in the center of the flour.
  3. 3. Crumble the yeast into the well.
  4. 4. Add a pinch of sugar.
  5. 5. Stir everything with a little lukewarm water until smooth.
  6. 6. Cover the bowl with a cloth.
  7. 7. Let the dough rise in a warm place for 20 minutes.
  8. 8. Pick the herbs off the stems.
  9. 9. Chop the herbs finely.
  10. 10. Grate the Parmesan cheese.
  11. 11. Brush a loaf pan with olive oil.
  12. 12. Add the chopped herbs to the bowl with the pre-dough.
  13. 13. Add the remaining olive oil.
  14. 14. Add salt and baking soda.
  15. 15. Add the grated Parmesan cheese.
  16. 16. Add the rest of the lukewarm water.
  17. 17. Knead everything well into the pre-dough.
  18. 18. Work the dough until it is firm.
  19. 19. Make sure the dough no longer sticks to your hands.
  20. 20. Cover the finished dough.
  21. 21. Let the dough rise for 1 hour.
  22. 22. Sprinkle some flour on a work surface.
  23. 23. Knead the risen dough briefly.
  24. 24. Shape the dough into a loaf.
  25. 25. Place the dough in the greased loaf pan.
  26. 26. Cover the dough.
  27. 27. Let the dough rise again for 15 minutes.
  28. 28. Make a long slit in the top with a sharp knife.
  29. 29. Preheat the oven to 200 degrees Celsius.
  30. 30. Bake the bread for about 50 minutes.
