  1. 1. Soak the gelatin in a large bowl with cold water.
  2. 2. Heat the vegetable broth in a pot.
  3. 3. Squeeze the soaked gelatin well.
  4. 4. Stir the squeezed gelatin into the warm broth until it has completely dissolved.
  5. 5. Remove the pot from the heat.
  6. 6. Pour the white wine into the broth.
  7. 7. Wash the herbs under running water.
  8. 8. Shake the herbs dry.
  9. 9. Finely chop the dill.
  10. 10. Finely chop the parsley.
  11. 11. Cut the cress into small pieces using kitchen scissors.
  12. 12. Pour the broth into small molds.
  13. 13. Wait until the broth begins to set.
  14. 14. Place the chopped herbs into the molds.
  15. 15. Use tweezers to place the herbs for a nice pattern.
