🍝 Herb spaghetti with porcini mushrooms

Ingredients
- 400 g Spaghetti
- Salt
- 1 Onion
- 1 red chili pepper
- 300 g mixed mushrooms (e.g. chanterelles, porcini)
- 3 tbsp olive oil
- 100 ml dry white wine
- Pepper (from the mill)
- 1 clove garlic
- 150 ml whipping cream
- 2 tbsp freshly chopped herbs (e.g. parsley and basil)
- 4 tbsp freshly grated parmesan
Instructions
- 1. Cook the spaghetti in salted water until al dente.
- 2. Peel the onion and dice it finely.
- 3. Wash the chili pepper, remove the seeds, and chop it finely.
- 4. Clean the porcini mushrooms and slice them.
- 5. Heat 2 tablespoons of oil in a pan.
- 6. Sauté the onions and chili in the hot oil.
- 7. Add the mushroom slices.
- 8. Fry the mushrooms until golden brown for 2 to 3 minutes.
- 9. Deglaze the mixture with white wine.
- 10. Season with salt and pepper.
- 11. Remove the pan from the heat and set it aside.
- 12. Peel the garlic and chop it finely.
- 13. Heat the remaining oil in a large pan.
- 14. Sauté the garlic briefly in the oil.
- 15. Pour in the cream.
- 16. Add the fresh herbs.
- 17. Add the drained spaghetti.
- 18. Toss everything well to combine.
- 19. If necessary, add a little pasta cooking water.
- 20. Season the sauce with salt.
- 21. Distribute the porcini mushrooms onto the plates.
- 22. Place the spaghetti on top of the mushrooms.
- 23. Sprinkle the dish with Parmesan cheese.
- 24. Serve the spaghetti hot.
