🍽️ Herb Sauce with Mustard

Ingredients
- 1 shallot
- 2 tbsp butter
- 2 tbsp spelt whole wheat flour
- 300 ml vegetable broth
- 100 ml whipping cream
- 2 tbsp medium-hot mustard
- 2 tbsp freshly chopped herbs (e.g. tarragon and dill)
- salt
- 1 tsp lemon juice
- white pepper
Instructions
- 1. Peel the shallot and cut it into very small cubes. Heat the butter in a pot and sauté the shallot cubes in it until they are soft and translucent. Sprinkle the flour over them and stir well.
- 2. Pour in the broth while stirring constantly and add the cream. Simmer the sauce over low heat, stirring occasionally, for about 10 minutes until it thickens. Cook it a little longer if necessary or add more broth.
- 3. Strain the sauce through a fine sieve and reheat it, but do not let it boil again. Stir in the mustard and the herbs and serve the sauce, seasoned with salt, lemon juice, and pepper.
