🍽️ Crispy Herb Fries

Ingredients
- 850 g firm-cooking potatoes
- 10 g cornstarch (1 tbsp)
- 2 tbsp olive oil
- salt
- 1 bunch herbs (20 g; parsley, thyme)
- 30 g Gouda (48% fat in dry matter)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into sticks.
- 3. Place the potato sticks in a bowl of cold water and rinse them again.
- 4. Drain the water.
- 5. Pat the potatoes dry with kitchen paper.
- 6. Add the cornstarch to the potatoes.
- 7. Mix everything well so the sticks are lightly coated.
- 8. Add the oil and the salt.
- 9. Mix the ingredients again thoroughly.
- 10. Line a baking tray with baking paper.
- 11. Spread the fries evenly on the tray.
- 12. Preheat the oven to 180 degrees conventional heat (160 degrees fan-forced or gas level 2–3).
- 13. Place the tray in the oven.
- 14. Bake the fries for 30 minutes.
- 15. Turn the fries once after 15 minutes.
- 16. Grate the cheese in the meantime.
- 17. Wash the herbs.
- 18. Shake the herbs dry.
- 19. Finely chop the herbs.
- 20. Mix the chopped herbs with the grated cheese.
- 21. Take the fries out of the oven.
- 22. Season the fries with salt to taste.
- 23. Sprinkle the herb-cheese mixture over the hot fries.
