🍰 Crunchy Muffins with Herbs and Cheese

Ingredients
- 2 Eggs (size M)
- 1 pinch Salt
- 50 ml neutral vegetable oil
- 50 ml olive oil
- 150 ml buttermilk
- 280 g flour
- 2 tsp baking powder
- 75 g freshly grated Parmesan
- 40 g chopped almond kernels
- 2 tbsp finely chopped parsley (and basil)
Instructions
- 1. Lightly beat the eggs in a large bowl.
- 2. Add a pinch of salt, both types of oil, and the buttermilk.
- 3. Whisk the liquid mixture until well combined.
- 4. Take a second bowl and add the flour.
- 5. Add the baking powder to the bowl.
- 6. Add the grated Parmesan cheese.
- 7. Add the ground almonds.
- 8. Sprinkle the chopped herbs over the dry ingredients.
- 9. Stir the dry ingredients well with a spoon or your hands.
- 10. Pour the liquid egg-buttermilk mixture into the bowl with the dry ingredients.
- 11. Take a spatula.
- 12. Mix everything gently until no dry flour remains.
- 13. Take a muffin tin with cups.
- 14. Place a paper baking cup into each cup.
- 15. Fill the batter evenly into the cups.
- 16. Preheat the oven to 200 degrees Celsius.
- 17. Place the tin in the oven.
- 18. Bake the muffins for 35 to 40 minutes.
- 19. Remove the tin when the muffins are golden brown.
