🍰 Herb and Cheese Muffins

Ingredients
- 40 g dried tomatoes (preserved in oil)
- 250 g flour
- 0.5 tsp salt
- 2 tbsp fresh chopped thyme
- 1 tsp baking powder
- 150 g freshly grated Parmesan
- 4 tbsp olive oil
- 2 tbsp pine nuts
- 250 ml buttermilk
- 1 egg
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Place paper liners into the cups of a muffin tin.
- 3. Drain the tomatoes well.
- 4. Chop the tomatoes finely.
- 5. Mix the flour with the salt.
- 6. Add the thyme to the flour mixture.
- 7. Add the baking powder to the flour mixture.
- 8. Add 100 grams of cheese to the flour mixture.
- 9. Coarsely puree the oil with the pine nuts.
- 10. Stir the buttermilk into the oil and pine nut mixture.
- 11. Stir the egg into the oil and pine nut mixture.
- 12. Stir the flour mixture into the liquid mixture.
- 13. Stir the chopped tomatoes into the batter.
- 14. Fill the batter into the liners.
- 15. Sprinkle the muffins with the remaining cheese.
- 16. Bake the muffins in the preheated oven for about 30 minutes.
- 17. Remove the muffins from the oven.
- 18. Let the muffins cool slightly in the liners.
- 19. Take the muffins out of the liners.
- 20. Let the muffins cool completely.
