🥗 Cod with Herb Crust and Fresh Salad

Ingredients
- 2 green chili peppers (chopped)
- 3 garlic cloves
- 1 untreated lemon (zested)
- lemon (juiced)
- 2 tbsp dill
- 2 tbsp parsley
- 1 tbsp olive oil
- salt
- pepper
- 4 cod fillets
- dill (for garnish)
- 1 bulb fennel (sliced into rings)
- 1 bunch watercress (washed and chopped)
- 1 avocado (diced)
- 6 basil leaves
- 50 g salad leaves
- 25 g pumpkin seeds
- 1 tsp Dijon mustard
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
Instructions
- 1. Put all marinade ingredients except the fish and one tablespoon of olive oil into a blender.
- 2. Blend the mixture until it is completely smooth.
- 3. Lightly grease a baking dish with some oil.
- 4. Place the fish fillet into the dish.
- 5. Spread the herb mixture evenly over the top of the fish.
- 6. Let the fish marinate for one hour.
- 7. Preheat the oven to 250 degrees Celsius.
- 8. Place the dish in the center of the oven.
- 9. Bake the fish for 6 to 10 minutes.
- 10. Serve the finished dish garnished with fresh dill.
- 11. Whisk mustard, vinegar, and olive oil in a small bowl.
- 12. Add the salad ingredients.
- 13. Mix everything well together.
