  1. 1. Rinse the fresh herbs under running water and shake them well to remove excess water. Wash the lemon under hot water and pat it dry. Now peel off the zest thinly, avoiding the white pith. Finally, wash the chili pepper.
  2. 2. Tie the herbs together into a small bundle. Place a slice of celery and the whole chili on top. Wrap the lemon zest around the bundle and tie it securely with kitchen twine.
