🍽️ Crispy Fried Herbs

Ingredients
- 2 handfuls herbs (e.g. sage, curly parsley)
- 1 egg
- 125 g flour
- 150 ml dry white wine
- 1 pinch salt
- 1 box cress
- vegetable oil (for deep frying)
Instructions
- 1. Rinse the herbs under cold water, pat them dry gently with a kitchen towel, and pluck the leaves off the stems.
- 2. Separate the egg: Carefully remove the yolk and set it aside. Whip the egg white in a clean bowl with a mixer or whisk until it is stiff and snowy.
- 3. Mix the flour with the egg yolk, the wine, and a pinch of salt until you have a smooth batter. Let this batter rest in a quiet place for about 10 minutes.
- 4. Gently fold the stiffly beaten egg white into the batter using a spoon or spatula. Make sure to keep the air in the batter.
- 5. Dip the herb leaves one by one into the batter so they are completely covered. Then fry them in batches in hot oil (approx. 170°C) in a deep pan for about 1 minute until golden brown and crispy. Remove them with a slotted spoon and let them drain on kitchen paper.
- 6. Beat the egg white until stiff and fold the egg white with the chopped cress into the batter.

- 8. Best pull the herb leaves through the batter with tweezers and fry in batches in hot oil (approx. 170°C) in a deep pan for approx. 1 minute until golden brown.
