  1. 1. Rinse the herbs under cold water, pat them dry gently with a kitchen towel, and pluck the leaves off the stems.
  2. 2. Separate the egg: Carefully remove the yolk and set it aside. Whip the egg white in a clean bowl with a mixer or whisk until it is stiff and snowy.
  3. 3. Mix the flour with the egg yolk, the wine, and a pinch of salt until you have a smooth batter. Let this batter rest in a quiet place for about 10 minutes.
  4. 4. Gently fold the stiffly beaten egg white into the batter using a spoon or spatula. Make sure to keep the air in the batter.
  5. 5. Dip the herb leaves one by one into the batter so they are completely covered. Then fry them in batches in hot oil (approx. 170°C) in a deep pan for about 1 minute until golden brown and crispy. Remove them with a slotted spoon and let them drain on kitchen paper.
  6. 6. Beat the egg white until stiff and fold the egg white with the chopped cress into the batter.
