🍽️ Trout Fillets with Herb Vegetable Gratin

Ingredients
- 400 g mostly waxy potatoes
- 4 stalks celery
- salt
- pepper
- 100 g sour cream
- 150 ml classic vegetable broth
- 0.5 organic lemon
- 300 g salmon trout fillet (2 salmon trout fillets)
- 2 sprigs thyme
- 0.5 bunch basil
- 0.5 bunch flat-leaf parsley
- 120 g large tomatoes (1 large tomato)
- 20 g parmesan (1 piece)
Instructions
- 1. Wash the potatoes and peel them.
- 2. Grate the potatoes into thin slices or cut them thinly.
- 3. Place the potato slices in a bowl.
- 4. Wash the celery and clean it.
- 5. Slice the celery into very thin pieces.
- 6. Add the celery slices to the potatoes.
- 7. Mix the vegetables well.
- 8. Transfer the vegetables into a baking dish.
- 9. Season the vegetables with salt and pepper.
- 10. Whisk the sour cream with the broth in a separate bowl.
- 11. Season the liquid with salt and pepper.
- 12. Pour the liquid over the vegetables in the baking dish.
- 13. Preheat the oven to 180 degrees (160 degrees for fan-assisted or gas mark 2-3).
- 14. Place the baking dish on the oven rack.
- 15. Bake the gratin for about 25 minutes.
- 16. Rinse the lemon under hot water.
- 17. Dry the lemon with a cloth.
- 18. Grate the lemon zest finely.
- 19. Squeeze the lemon if you like.
- 20. Rinse the trout fillets.
- 21. Pat the fillets dry with kitchen paper.
- 22. Carefully separate the fillets from the skin using a large knife.
- 23. Season the fillets with salt and pepper.
- 24. Wash the herbs and shake off excess water.
- 25. Pluck the leaves from the stems.
- 26. Finely chop the herbs.
- 27. Mix the chopped herbs with the lemon zest in a small bowl.
- 28. Wash the tomato.
- 29. Cut out the stem area in a wedge shape.
- 30. Slice the tomato thinly.
- 31. Grate the cheese finely.
- 32. Remove the gratin from the oven.
- 33. Place the trout fillets on top of the vegetables.
- 34. Spread the herb-lemon mixture over the fillets.
- 35. Top the fillets with the tomato slices.
- 36. Season with salt and pepper to taste.
- 37. Sprinkle the grated cheese over the top.
- 38. Return the baking dish to the oven.
- 39. Bake the dish for another 10 to 15 minutes.
- 40. Serve the dish with the lemon juice, if desired.
