  1. 1. Preheat the oven to 225 degrees Celsius.
  2. 2. Wash the trout thoroughly inside and out.
  3. 3. Pat the fish dry with a kitchen towel.
  4. 4. Pluck half of the thyme leaves from the stems.
  5. 5. Chop the thyme leaves very finely.
  6. 6. Brush the trout inside and out with olive oil.
  7. 7. Season the fish inside and out with salt.
  8. 8. Sprinkle the finely chopped thyme leaves over the outside of the fish.
  9. 9. Insert the remaining thyme sprigs into the fish cavities.
  10. 10. Halve the lemons.
  11. 11. Slice off the ends of the lemon halves to make them flat.
  12. 12. Use the tip of a knife to make a small cut in the flesh of each lemon half.
  13. 13. Insert a bay leaf into each cut.
  14. 14. Peel the garlic.
  15. 15. Chop the garlic coarsely.
  16. 16. Place the trout on a baking sheet.
  17. 17. Add the garlic and lemon halves to the sheet.
  18. 18. Roast the trout in the preheated oven for 12 to 15 minutes.
  19. 19. Check for doneness: The flesh at the thickest part should separate easily from the bone.
  20. 20. Roast the fish for a few more minutes if necessary.
  21. 21. Arrange the trout with the lemons and garlic.
  22. 22. Serve the dish.
