  1. 1. Rinse the dorade fish under cold water.
  2. 2. Pat the fish dry inside and out with a kitchen towel.
  3. 3. Season the fish generously with salt and pepper.
  4. 4. Peel the garlic cloves.
  5. 5. Finely chop the garlic.
  6. 6. Rinse the lemon under hot water.
  7. 7. Dry the lemon.
  8. 8. Squeeze out one tablespoon of lemon juice.
  9. 9. Slice the rest of the lemon into thin rounds.
  10. 10. Wash the rosemary.
  11. 11. Shake the rosemary dry.
  12. 12. Strip the needles off the rosemary sprig.
  13. 13. Mix the oil with the lemon juice.
  14. 14. Stir the chopped garlic into the oil mixture.
  15. 15. Fold in the rosemary needles.
  16. 16. Line a baking tray with baking paper.
  17. 17. Place the seasoned fish on the tray.
  18. 18. Drizzle the marinade over the fish.
  19. 19. Place the lemon slices on top of the fish.
  20. 20. Preheat the oven to 200 degrees.
  21. 21. Bake the fish at 200 degrees conventional heat.
  22. 22. Alternatively use 180 degrees fan-forced heat.
  23. 23. Alternatively use gas level 3.
  24. 24. Roast the fish for 40 to 45 minutes.
  25. 25. Remove the fish from the oven.
  26. 26. Serve the fish immediately.
