🍽️ Crab Salad – Smart

Ingredients
- 1 egg
- 1 piece lemon
- 1 tsp honey
- 1 tbsp rapeseed oil
- 50 g gherkins (1 gherkin)
- 1 bunch radishes
- 1 onion
- 3 stalks chervil
- 100 g North Sea crabs (peeled)
- 1 box garden cress
- 2 leaves head lettuce (to taste)
Instructions
- 1. Poke an egg with a needle.
- 2. Place the egg in boiling water.
- 3. Boil the egg hard for 8 to 9 minutes.
- 4. Shock the egg by holding it under cold water.
- 5. Peel the shell off the egg.
- 6. Finely chop the egg with a knife.
- 7. Squeeze the juice from a piece of lemon into a bowl.
- 8. Stir honey into the lemon liquid.
- 9. Stir oil into the mixture.
- 10. Dice the gherkin finely.
- 11. Wash the radishes.
- 12. Remove the stems and leaves from the radishes.
- 13. Shave the radishes into thin slices or cut them finely.
- 14. Peel the onion.
- 15. Dice the onion finely.
- 16. Wash the chervil.
- 17. Dry the chervil with a cloth.
- 18. Pluck the leaves from the chervil.
- 19. Chop the chervil leaves.
- 20. Mix the crab meat with the sauce.
- 21. Mix the crab meat with the diced ingredients.
- 22. Fold in the chopped egg at the end.
- 23. Cut the cress from the bed.
- 24. Sprinkle the cress over the crab salad.
- 25. Garnish the salad with lettuce leaves as desired.
- 26. Serve the salad with whole grain crispbread.
