🍽️ Fresh Crab, Orange, and Feta Salad with Coriander

Ingredients
- 350 g Shrimp (kitchen-ready pre-cooked and peeled except for the tail segment)
- 100 g Feta
- 4 Oranges
- 2 tbsp Olive oil
- Sea salt
- 1 Handful Spinach
- 1 Sprig Oregano
- 1 tsp Coriander seeds
Instructions
- 1. Rinse the crab meat thoroughly and pat it dry with a kitchen towel.
- 2. Cut the feta cheese into small, even cubes.
- 3. Peel the oranges and carefully cut the segments out of the fruit flesh.
- 4. Catch the released orange juice in a small bowl.
- 5. Squeeze the remaining orange halves to extract the last drops of juice.
- 6. Whisk the collected juice with the olive oil to create a dressing.
- 7. Season the dressing with a pinch of salt.
- 8. Wash the fresh spinach and remove any tough stems.
- 9. Let the washed spinach drain well before using it.
- 10. Pluck the fresh oregano leaves off the stems.
- 11. Mix the drained spinach, feta cubes, and half of the orange segments in a bowl.
- 12. Loosely fill the mixture into four individual glasses.
- 13. Place the filled glasses onto small plates.
- 14. Mix the crab meat with the remaining orange segments.
- 15. Place the crab and orange mixture on the plates directly next to the glasses.
- 16. Drizzle the entire salad with the prepared oil and juice sauce.
- 17. Finally, sprinkle the dish with some sea salt and freshly ground coriander.
- 18. Serve the salad immediately while fresh.
