  1. 1. Rinse the crab meat thoroughly and pat it dry with a kitchen towel.
  2. 2. Cut the feta cheese into small, even cubes.
  3. 3. Peel the oranges and carefully cut the segments out of the fruit flesh.
  4. 4. Catch the released orange juice in a small bowl.
  5. 5. Squeeze the remaining orange halves to extract the last drops of juice.
  6. 6. Whisk the collected juice with the olive oil to create a dressing.
  7. 7. Season the dressing with a pinch of salt.
  8. 8. Wash the fresh spinach and remove any tough stems.
  9. 9. Let the washed spinach drain well before using it.
  10. 10. Pluck the fresh oregano leaves off the stems.
  11. 11. Mix the drained spinach, feta cubes, and half of the orange segments in a bowl.
  12. 12. Loosely fill the mixture into four individual glasses.
  13. 13. Place the filled glasses onto small plates.
  14. 14. Mix the crab meat with the remaining orange segments.
  15. 15. Place the crab and orange mixture on the plates directly next to the glasses.
  16. 16. Drizzle the entire salad with the prepared oil and juice sauce.
  17. 17. Finally, sprinkle the dish with some sea salt and freshly ground coriander.
  18. 18. Serve the salad immediately while fresh.
