  1. 1. Whisk the eggs and cream together vigorously in a bowl using a fork or whisk.
  2. 2. Season the egg mixture generously with salt and freshly ground pepper.
  3. 3. Rinse the herbs under cold water and shake them dry.
  4. 4. Pick the leaves off the stems and chop them finely.
  5. 5. Stir the chopped herbs into the seasoned egg mixture.
  6. 6. Heat some oil in a non-stick frying pan.
  7. 7. Pour half of the egg mixture into the hot pan.
  8. 8. Stir the egg constantly until the edges begin to set.
  9. 9. Stop stirring and let the omelette cook slowly for 3 to 4 minutes.
  10. 10. Sprinkle half of the crab meat onto one half of the egg.
  11. 11. Fold the empty half of the omelette over the crab meat.
  12. 12. Cut the omelette in half.
  13. 13. Place one half onto a pre-warmed plate.
  14. 14. Repeat the process with the remaining egg mixture to prepare the second portion.
  15. 15. Serve both omelettes immediately while warm.
