🍽️ Fluffy Crab Omelette

Ingredients
- 10 Eggs
- 50 ml Heavy cream
- Salt
- Pepper
- 1 Handful fresh herbs (Parsley, Chervil and Dill)
- Vegetable oil (for frying)
- 200 g Crab meat (pre-cooked and peeled)
Instructions
- 1. Whisk the eggs and cream together vigorously in a bowl using a fork or whisk.
- 2. Season the egg mixture generously with salt and freshly ground pepper.
- 3. Rinse the herbs under cold water and shake them dry.
- 4. Pick the leaves off the stems and chop them finely.
- 5. Stir the chopped herbs into the seasoned egg mixture.
- 6. Heat some oil in a non-stick frying pan.
- 7. Pour half of the egg mixture into the hot pan.
- 8. Stir the egg constantly until the edges begin to set.
- 9. Stop stirring and let the omelette cook slowly for 3 to 4 minutes.
- 10. Sprinkle half of the crab meat onto one half of the egg.
- 11. Fold the empty half of the omelette over the crab meat.
- 12. Cut the omelette in half.
- 13. Place one half onto a pre-warmed plate.
- 14. Repeat the process with the remaining egg mixture to prepare the second portion.
- 15. Serve both omelettes immediately while warm.
