  2. 2. Knead flour, butter, sour cream, egg, and salt into a smooth dough.
  3. 3. Wrap the dough in plastic wrap and chill it for 30 minutes.
  4. 4. Wash the shrimp, drain them, and chop them finely.
  5. 5. Whisk the eggs with cream and crème fraîche.
  6. 6. Fold the chopped shrimp into the egg mixture.
  7. 7. Season the mixture with salt, pepper, and nutmeg.
  8. 8. Wash the thyme, parsley, and dill and shake them dry.
  9. 9. Pluck the leaves from the stems and chop the herbs finely.
  10. 10. Stir the chopped herbs into the shrimp and egg mixture.
  11. 11. Grease the tartlet molds with butter.
  12. 12. Line the molds with the dough.
  13. 13. Distribute the shrimp and egg mixture evenly over the dough.
  14. 14. Sprinkle the tarts with grated cheese.
