Ingredients
- 200 g flour
- 100 g cold butter (in pieces)
- 50 g sour cream
- 1 egg
- salt
- 300 g shrimp
- 8 eggs
- 300 ml whipping cream
- 100 g crème fraîche
- salt
- pepper (from the mill)
- nutmeg
- 2 sprigs fresh thyme
- 2 sprigs fresh parsley
- 2 sprigs fresh dill
- 50 g butter (for greasing)
- 200 g grated Parmesan
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Knead flour, butter, sour cream, egg, and salt into a smooth dough.
- 3. Wrap the dough in plastic wrap and chill it for 30 minutes.
- 4. Wash the shrimp, drain them, and chop them finely.
- 5. Whisk the eggs with cream and crème fraîche.
- 6. Fold the chopped shrimp into the egg mixture.
- 7. Season the mixture with salt, pepper, and nutmeg.
- 8. Wash the thyme, parsley, and dill and shake them dry.
- 9. Pluck the leaves from the stems and chop the herbs finely.
- 10. Stir the chopped herbs into the shrimp and egg mixture.
- 11. Grease the tartlet molds with butter.
- 12. Line the molds with the dough.
- 13. Distribute the shrimp and egg mixture evenly over the dough.
- 14. Sprinkle the tarts with grated cheese.
