🍕 Shrimp Leek Pizza with Pineapple

Ingredients
- 300 g flour
- 20 g yeast
- 0.125 l lukewarm water
- 4 tbsp olive oil
- salt
- 500 g leek (cleaned, cut into thin strips)
- 240 g pineapple (1 small can)
- 1 tbsp olive oil
- 1 tsp thyme (dried)
- salt
- pepper (from the mill)
- 150 g mozzarella
- 150 g shrimp (cooked, peeled)
- 100 g Gruyère cheese (freshly grated)
Instructions
- 1. Sift the flour into a large bowl.
- 2. Press a well into the center of the flour with your thumb.
- 3. Crumble the yeast into a little water and pour it into the well.
- 4. Lightly dust the yeast with flour.
- 5. Cover the bowl and let the yeast rise for 15 minutes.
- 6. Add the remaining water, salt, and oil.
- 7. Knead everything into a smooth dough.
- 8. Cover the dough and let it rise in a warm place for 1 hour.
- 9. Drain the pineapple.
- 10. Cut the pineapple into small cubes.
- 11. Dice the mozzarella finely as well.
- 12. Sauté the leek in oil.
- 13. Stir the thyme into the leek.
- 14. Season the mixture with salt and pepper.
- 15. Knead the dough once more.
- 16. Roll the dough into an oval shape.
- 17. Place the dough on a greased baking sheet.
- 18. Shape the edge of the pizza slightly thicker.
- 19. Distribute the leek, pineapple, and shrimp on the dough.
- 20. Sprinkle the mozzarella cubes and grated Gruyère cheese over the top.
- 21. Preheat the oven to 220 degrees.
- 22. Bake the pizza for approx. 20 minutes in the preheated oven.
