  1. 1. Sift the flour into a large bowl.
  2. 2. Press a well into the center of the flour with your thumb.
  3. 3. Crumble the yeast into a little water and pour it into the well.
  4. 4. Lightly dust the yeast with flour.
  5. 5. Cover the bowl and let the yeast rise for 15 minutes.
  6. 6. Add the remaining water, salt, and oil.
  7. 7. Knead everything into a smooth dough.
  8. 8. Cover the dough and let it rise in a warm place for 1 hour.
  9. 9. Drain the pineapple.
  10. 10. Cut the pineapple into small cubes.
  11. 11. Dice the mozzarella finely as well.
  12. 12. Sauté the leek in oil.
  13. 13. Stir the thyme into the leek.
  14. 14. Season the mixture with salt and pepper.
  15. 15. Knead the dough once more.
  16. 16. Roll the dough into an oval shape.
  17. 17. Place the dough on a greased baking sheet.
  18. 18. Shape the edge of the pizza slightly thicker.
  19. 19. Distribute the leek, pineapple, and shrimp on the dough.
  20. 20. Sprinkle the mozzarella cubes and grated Gruyère cheese over the top.
  21. 21. Preheat the oven to 220 degrees.
  22. 22. Bake the pizza for approx. 20 minutes in the preheated oven.
