🍽️ Lamb chops with fresh basil pesto and rocket

Ingredients
- 1 bunch basil
- 2 garlic cloves
- 1 tbsp pine nuts
- olive oil
- salt
- pepper (from the mill)
- 1 dash lemon juice
- 100 g arugula
- 8 lamb chops (ready for cooking)
- 2 tbsp vegetable oil
Instructions
- 1. Pick the basil leaves off the stems.
- 2. Put the basil leaves, the peeled garlic, the pine nuts and the olive oil into a blender.
- 3. Blend the ingredients finely until a creamy paste forms.
- 4. Season the pesto with salt, pepper and a splash of lemon juice.
- 5. Wash the rocket and remove any wilted greens.
- 6. Distribute the rocket onto the plates.
- 7. Wash the lamb chops and pat them dry with a kitchen towel.
- 8. Season the chops with salt and pepper.
- 9. Heat oil in a frying pan.
- 10. Fry the chops in the hot oil for about 2 minutes on each side until golden brown.
- 11. Place the finished chops on the rocket salad.
- 12. Spread the pesto over the chops and serve.
