  1. 1. Preheat the oven to 220 degrees Celsius fan-forced.
  2. 2. Wash the thyme and pat it dry with a kitchen towel.
  3. 3. Pluck the leaves from two thyme sprigs and chop them finely.
  4. 4. Wash the apple and cut it into quarters.
  5. 5. Remove the core from the apple quarters.
  6. 6. Cut the apple pieces into thin wedges.
  7. 7. Place the apple wedges in a bowl and mix them with the lemon juice.
  8. 8. Wash the pork chops and pat them dry.
  9. 9. Season the pork chops with salt and pepper.
  10. 10. Heat two tablespoons of olive oil in a frying pan.
  11. 11. Sear the pork chops on both sides over high heat.
  12. 12. Remove the pork chops from the pan and set them aside.
  13. 13. Mix the remaining oil, mustard, egg, chopped thyme leaves, and breadcrumbs into a paste.
  14. 14. Spread the mustard-egg paste evenly over the pork chops.
  15. 15. Place the apple wedges on top of the coated pork chops.
  16. 16. Brush a baking dish with a little oil.
  17. 17. Place the pork chops with the apple wedges into the prepared dish.
  18. 18. Bake the pork chops in the oven for 8 to 10 minutes.
  19. 19. Remove the dish from the oven.
  20. 20. Garnish the pork chops with the remaining fresh thyme.
  21. 21. Serve the dish with the vegetables.
