🍽️ Mustard-Egg Crust on Pork Chops with Apple

Ingredients
- 6 sprigs lemon thyme
- 1 large, tart apple (e.g. Boskop)
- 1 tbsp lemon juice
- 4 pork chops (approx. 150 g each)
- salt
- pepper (from the mill)
- 4 tbsp olive oil
- 4 tbsp grainy mustard
- 1 egg yolk
- 2 tbsp breadcrumbs
- oil (for the dish)
- 1 zucchini
- 300 g broccoli
- 80 g green beans
- 1 tbsp butter
Instructions
- 1. Preheat the oven to 220 degrees Celsius fan-forced.
- 2. Wash the thyme and pat it dry with a kitchen towel.
- 3. Pluck the leaves from two thyme sprigs and chop them finely.
- 4. Wash the apple and cut it into quarters.
- 5. Remove the core from the apple quarters.
- 6. Cut the apple pieces into thin wedges.
- 7. Place the apple wedges in a bowl and mix them with the lemon juice.
- 8. Wash the pork chops and pat them dry.
- 9. Season the pork chops with salt and pepper.
- 10. Heat two tablespoons of olive oil in a frying pan.
- 11. Sear the pork chops on both sides over high heat.
- 12. Remove the pork chops from the pan and set them aside.
- 13. Mix the remaining oil, mustard, egg, chopped thyme leaves, and breadcrumbs into a paste.
- 14. Spread the mustard-egg paste evenly over the pork chops.
- 15. Place the apple wedges on top of the coated pork chops.
- 16. Brush a baking dish with a little oil.
- 17. Place the pork chops with the apple wedges into the prepared dish.
- 18. Bake the pork chops in the oven for 8 to 10 minutes.
- 19. Remove the dish from the oven.
- 20. Garnish the pork chops with the remaining fresh thyme.
- 21. Serve the dish with the vegetables.
