  3. 3. Wash the pork chops.
  4. 4. Pat the meat dry with a kitchen towel.
  5. 5. Season the pork chops with salt and pepper.
  6. 6. Heat oil in a pan.
  7. 7. Fry the meat in the hot oil on both sides briefly.
  8. 8. Fry the meat until it is brown.
  9. 9. Remove the meat from the pan.
  10. 10. Sauté the shallots and garlic in the remaining fat.
  11. 11. Deglaze with white wine.
  12. 12. Let the liquid reduce.
