🍽️ Grilled Pork Chops with Fresh Corn Salsa

Ingredients
- 4 pork chops (approx. 200 g each)
- 2 garlic cloves
- 0.5 tsp chili flakes
- 0.5 tsp curry powder
- 2 tbsp honey
- 2 tbsp light soy sauce
- 2 tbsp lemon juice
- 5 tbsp sunflower oil
- salt
- pepper (from the mill)
- 1 handful cilantro leaves
- 1 red onion
- 1 small red chili pepper
- 150 g cherry tomatoes
- 280 g corn (canned)
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- salt
- cayenne pepper
Instructions
- 1. Rinse the pork chops under cold water and pat them completely dry with a kitchen towel.
- 2. Peel the garlic clove and cut it in half.
- 3. Mix the garlic in a bowl with chili flakes, curry powder, honey, soy sauce, lemon juice, and about 5 tablespoons of oil.
- 4. Place the pork chops in the marinade, cover the bowl, and refrigerate for at least 2 hours.
- 5. Rinse the fresh cilantro and shake off the excess water.
- 6. Pick the cilantro leaves off the stems.
- 7. Peel the onion and dice it into fine cubes.
- 8. Rinse the chili, remove the seeds, and chop it finely.
- 9. Wash the tomatoes and cut them in half.
- 10. Drain the corn from the can.
- 11. Combine the corn in a bowl with the tomatoes, onion, chili, and cilantro leaves.
- 12. Add oil and vinegar to the salsa and season with salt and cayenne pepper.
- 13. Preheat the grill.
- 14. Remove the pork chops from the marinade.
- 15. Fry the pork chops in a grill pan for about 4 minutes on each side.
- 16. Add a little extra oil if the pan looks too dry.
- 17. Season the pork chops with salt and pepper to taste.
- 18. Serve the pork chops together with the corn salsa.
