  1. 1. Wash the beans, trim the ends, and boil them for 6 to 8 minutes in salted water with a pinch of baking soda. Immediately plunge them into ice water to preserve their color, then drain. Peel the garlic and slice it thinly.
  2. 2. Heat butter and oil in a large pan. Fry the chops for 3 to 4 minutes on the first side. Turn the meat, season with salt and pepper. Drizzle the maple syrup over the chops and distribute the garlic slices on top. Cook for another 2 to 3 minutes.
  3. 3. Let the chops rest for about 3 minutes under aluminum foil. In the meantime, warm the beans in the same pan by shaking it occasionally. Season them with salt and pepper at the end. Serve with small new potatoes.
