🍽️ Veal Chop with Fresh Peach Salsa

Ingredients
- 4 veal chops
- salt
- pepper (from the mill)
- 2 tbsp ghee
- leaf lettuce (to taste)
- 2 ripe peaches
- 1 red onion
- 1 tbsp finely chopped cilantro
- 1 tsp honey
- 3 tbsp lime juice
- salt
Instructions
- 1. Preheat the oven to 120 degrees Celsius using the top and bottom heat setting.
- 2. Season the veal chops generously with salt and pepper.
- 3. Heat ghee (clarified butter) in a grill pan.
- 4. Sear the chops in the hot pan on both sides until they are browned.
- 5. Place the pan into the preheated oven.
- 6. Cook the chops in the oven for 15 to 20 minutes until they are pink inside.
- 7. Pour boiling water over the peaches briefly.
- 8. Immediately shock the peaches in cold water.
- 9. Peel the skin off the peaches.
- 10. Halve the peaches and remove the pits.
- 11. Dice the peach flesh into small cubes.
- 12. Peel the onion.
- 13. Dice the onion into small cubes as well.
- 14. Mix the peach cubes, onion cubes, coriander, honey, and lime juice in a bowl.
- 15. Season the mixture to taste with salt.
- 16. Place the finished chops on plates with lettuce leaves.
- 17. Serve the dish with the peach salsa on the side.
