🍽️ Raisin and Thyme Bread

Ingredients
- 150 ml milk
- 150 ml water
- 1 pinch sugar
- 1 heaped tsp dried yeast
- 350 g flour
- 0.5 tsp salt
- 1 tbsp sunflower oil
- 1 egg yolk
- 100 g raisins
- 6 sprigs thyme
- 2 tbsp olive oil
Instructions
- 1. Preheat your oven to 190 degrees Celsius (conventional heat) or gas mark 5.
- 2. Warm the milk and water in a saucepan until they are lukewarm.
- 3. Pour the lukewarm liquid into a small bowl.
- 4. Add the sugar to the bowl.
- 5. Sprinkle the dried yeast over the mixture.
- 6. Stir everything until the yeast has completely dissolved.
- 7. Let this starter mixture rest for 10 minutes until it becomes slightly foamy.
- 8. Sift the flour and salt into a large mixing bowl.
- 9. Pour the foamy starter mixture and the oil into the flour mixture.
- 10. Knead the dough vigorously until it pulls away from the sides of the bowl.
- 11. Take the dough out and place it on your work surface.
- 12. Continue kneading the dough until it is smooth and elastic.
- 13. Place the finished dough back into the bowl.
- 14. Lightly dust the surface of the bowl with flour.
- 15. Cover the bowl with cling film.
- 16. Let the dough rise in a warm place for 1 hour until it has doubled in size.
- 17. Whisk the egg yolk with 3 to 4 tablespoons of water in a small dish.
- 18. Brush the egg mixture evenly over the surface of the risen bread.
- 19. Distribute the raisins and thyme sprigs evenly over the bread.
- 20. Drizzle a little oil over the toppings.
- 21. Let the bread rise again for about 40 minutes.
- 22. Bake the bread in the preheated oven for approx. 30 minutes until golden brown.
- 23. Tap the bottom of the bread with the handle of a wooden spoon.
- 24. If it sounds hollow, the bread is fully baked.
- 25. Place the bread on a wire rack to cool down.
- 26. Slice the cooled bread.
- 27. Serve the bread slices with butter.
