  1. 1. Preheat your oven to 190 degrees Celsius (conventional heat) or gas mark 5.
  2. 2. Warm the milk and water in a saucepan until they are lukewarm.
  3. 3. Pour the lukewarm liquid into a small bowl.
  4. 4. Add the sugar to the bowl.
  5. 5. Sprinkle the dried yeast over the mixture.
  6. 6. Stir everything until the yeast has completely dissolved.
  7. 7. Let this starter mixture rest for 10 minutes until it becomes slightly foamy.
  8. 8. Sift the flour and salt into a large mixing bowl.
  9. 9. Pour the foamy starter mixture and the oil into the flour mixture.
  10. 10. Knead the dough vigorously until it pulls away from the sides of the bowl.
  11. 11. Take the dough out and place it on your work surface.
  12. 12. Continue kneading the dough until it is smooth and elastic.
  13. 13. Place the finished dough back into the bowl.
  14. 14. Lightly dust the surface of the bowl with flour.
  15. 15. Cover the bowl with cling film.
  16. 16. Let the dough rise in a warm place for 1 hour until it has doubled in size.
  17. 17. Whisk the egg yolk with 3 to 4 tablespoons of water in a small dish.
  18. 18. Brush the egg mixture evenly over the surface of the risen bread.
  19. 19. Distribute the raisins and thyme sprigs evenly over the bread.
  20. 20. Drizzle a little oil over the toppings.
  21. 21. Let the bread rise again for about 40 minutes.
  22. 22. Bake the bread in the preheated oven for approx. 30 minutes until golden brown.
  23. 23. Tap the bottom of the bread with the handle of a wooden spoon.
  24. 24. If it sounds hollow, the bread is fully baked.
  25. 25. Place the bread on a wire rack to cool down.
  26. 26. Slice the cooled bread.
  27. 27. Serve the bread slices with butter.
