  1. 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
  2. 2. Cut the meat into small, even cubes.
  3. 3. Peel the garlic cloves and chop them very finely.
  4. 4. Place the meat cubes into a bowl.
  5. 5. Add the finely chopped garlic, the ginger, and 2 to 3 tablespoons of fish sauce to the meat.
  6. 6. Mix everything well so that the meat is evenly marinated.
  7. 7. Ideally, let the meat marinate in the refrigerator overnight.
  8. 8. Cut the sausages into bite-sized pieces.
  9. 9. Peel the onions.
  10. 10. Slice the onions into thin strips.
  11. 11. Thoroughly wash the spring onions.
  12. 12. Remove the dry ends of the spring onions.
  13. 13. Slice the spring onions into thin strips as well.
  14. 14. Heat some oil in a large pot.

  23. 23. If the liquid has reduced too much, add a little more water.
  24. 24. Season the stew to taste with fish sauce and cayenne pepper at the end.
