🍲 Hearty Korean Noodle Stew with Meat and Vegetables

Ingredients
- 400 g beef (e.g. sirloin)
- 2 tbsp sesame oil
- 200 g sausages (small mettwurst sausages)
- 200 g Asian egg noodles
- 2 onions
- 1 tsp ginger (freshly grated)
- 1 bunch spring onions
- 4 garlic cloves
- 1 tsp miso paste
- fish sauce
- cayenne pepper
Instructions
- 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into small, even cubes.
- 3. Peel the garlic cloves and chop them very finely.
- 4. Place the meat cubes into a bowl.
- 5. Add the finely chopped garlic, the ginger, and 2 to 3 tablespoons of fish sauce to the meat.
- 6. Mix everything well so that the meat is evenly marinated.
- 7. Ideally, let the meat marinate in the refrigerator overnight.
- 8. Cut the sausages into bite-sized pieces.
- 9. Peel the onions.
- 10. Slice the onions into thin strips.
- 11. Thoroughly wash the spring onions.
- 12. Remove the dry ends of the spring onions.
- 13. Slice the spring onions into thin strips as well.
- 14. Heat some oil in a large pot.
- 15. Add the marinated meat to the pot and sear it briefly.
- 16. Add the sliced onions and the miso paste to the meat.
- 17. Deglaze everything with about 1 liter of water.
- 18. Let the stew simmer gently over low heat for about 30 minutes.
- 19. Add the sausages and the spring onions to the pot.
- 20. Let everything cook through for another 20 minutes.
- 21. Add the noodles to the stew.
- 22. Cook the noodles until they are al dente (firm to the bite).
- 23. If the liquid has reduced too much, add a little more water.
- 24. Season the stew to taste with fish sauce and cayenne pepper at the end.
- 25. Serve the stew hot.
