🍽️ Fruity Head Lettuce Salad with Creamy Yogurt Dressing

Ingredients
- 1 Pineapple
- 3 Shallots
- 500 g Cherry Tomatoes
- 2 Oranges
- 1 Head Lettuce
- 2 tsp Pickled Green Peppercorns
- 3 tbsp Lemon Juice
- 250 g Yogurt
- Salt
- Pepper (from the mill)
- 2 tsp Apple Syrup
- Lemon Balm (for garnish)
Instructions
- 1. Peel the pineapple and cut it into four long quarters.
- 2. Cut out the hard core from the pineapple pieces.
- 3. Slice the pineapple into thin rounds.
- 4. Peel the shallots and slice them into very thin rings.
- 5. Wash the tomatoes and cut them in half.
- 6. Peel the oranges with a sharp knife until all white pith is removed.
- 7. Carefully cut out the orange segments along the membranes.
- 8. Catch the released orange juice in a bowl.
- 9. Squeeze the remaining orange peels and seeds to extract the juice.
- 10. Wash the head lettuce thoroughly.
- 11. Remove any wilted or damaged leaves.
- 12. Dry the lettuce using a salad spinner.
- 13. Cut the lettuce into bite-sized pieces.
- 14. Place all prepared fruit and vegetable ingredients into a large bowl.
- 15. Add the green peppercorns.
- 16. Toss everything gently without crushing the ingredients.
- 17. Pour the lemon juice into a small bowl.
- 18. Add the collected orange juice.
- 19. Add the yogurt to the bowl.
- 20. Season with a pinch of salt.
- 21. Season with a pinch of pepper.
- 22. Stir the apple syrup into the yogurt mixture.
- 23. Mix the dressing well until it is creamy.
- 24. Pour the dressing over the salad.
- 25. Finely chop the lemon balm.
- 26. Sprinkle the salad with the lemon balm.
