  8. 8. Catch the released orange juice in a bowl.
  9. 9. Squeeze the remaining orange peels and seeds to extract the juice.
  10. 10. Wash the head lettuce thoroughly.
  11. 11. Remove any wilted or damaged leaves.
  12. 12. Dry the lettuce using a salad spinner.
  13. 13. Cut the lettuce into bite-sized pieces.
