🍽️ Konjak noodles with shrimp

Ingredients
- 500 g Konjac noodles (low-carb noodles)
- 250 g Shrimp (kitchen-ready, without head and shell)
- 2 stalks Coriander
- 1 small red Chili pepper
- 400 g Kidney beans
- 1 tbsp Coconut oil
- Salt
- Pepper
- 2 tsp ground Turmeric
- 2 pinches ground Cumin
- 1 pinch Cinnamon
- 1 pinch Paprika powder
- 50 ml Passion fruit juice
- 2 tbsp Lemon juice
- 150 ml Vegetable broth
- 200 ml Coconut milk
Instructions
- 1. Place the konjak noodles in a bowl and pour lukewarm water over them.
- 2. Rinse the shrimp under running water and pat them dry with a kitchen towel.
- 3. Wash the coriander, shake off excess water, and finely chop the leaves.
- 4. Cut the chili pepper in half lengthwise, remove the seeds and inner membrane, and chop the pepper.
- 5. Trim the beans, wash them, and cut them into bite-sized pieces.
- 6. Heat the oil in a large pan.
- 7. Fry the shrimp over medium heat for three minutes.
- 8. Season the shrimp with salt, pepper, turmeric, cumin, cinnamon, and paprika powder.
- 9. Pour the passion fruit juice, lemon juice, broth, and coconut milk into the pan.
- 10. Add the chopped chili pepper and let the sauce simmer for four minutes over medium heat.
- 11. Add the beans to a pot of boiling salted water and cook them for two minutes.
- 12. Drain the konjak noodles in a colander.
- 13. Add the drained noodles to the beans.
- 14. Let the noodles and beans simmer together for three more minutes over low heat.
- 15. Drain the noodle and bean mixture and let it drain well.
- 16. Portion the noodles and beans onto plates.
- 17. Pour the shrimp sauce over the noodles.
- 18. Sprinkle the chopped coriander over the dish.
