🍝 Konjak Noodles with Berries

Ingredients
- 1 organic lime
- 2 shallots
- 1 clove of garlic
- 1 red chili pepper
- 200 g celery stalks (3 stalks)
- 2 tbsp rapeseed oil
- 100 ml vegetable broth
- 200 ml almond cream or soy cream
- 30 g pine nuts (2 tbsp)
- 75 g strawberries (5 strawberries)
- 10 g parsley (0.5 bunch)
- salt
- pepper
- 400 g konjac noodles (spaghetti)
Instructions
- 1. Rinse the lime under hot water and pat it dry with a cloth.
- 2. Grate a little of the lime zest finely.
- 3. Cut the lime in half and squeeze out the juice.
- 4. Peel the shallots and garlic.
- 5. Dice the shallots and garlic finely.
- 6. Cut the chili pepper in half lengthwise.
- 7. Remove the seeds from the chili pepper.
- 8. Wash the deseeded chili pepper.
- 9. Chop the chili pepper finely.
- 10. Clean the celery stalk.
- 11. Remove fibrous strings from the celery if necessary.
- 12. Wash the celery.
- 13. Slice the celery into 1 cm thick rounds.
- 14. Roughly chop the celery greens.
- 15. Heat the oil in a pot.
- 16. Add the shallots, garlic, chili, celery, and celery greens to the pot.
- 17. Sauté the ingredients for 3 to 4 minutes over medium heat.
- 18. Deglaze the mixture with the broth.
- 19. Pour in the almond cuisine (almond cream).
- 20. Bring the mixture to a boil.
- 21. Simmer the mixture uncovered for 5 to 6 minutes.
- 22. Toast the pine nuts in a hot pan without fat over medium heat for 3 minutes.
- 23. Hull the strawberries.
- 24. Wash the strawberries.
- 25. Pat the strawberries dry.
- 26. Cut the strawberries into small cubes.
- 27. Wash the parsley.
- 28. Shake the parsley dry.
- 29. Chop the parsley.
- 30. Add the parsley to the sauce.
- 31. Season the sauce with salt.
- 32. Season the sauce with pepper.
- 33. Add the grated lime zest to the sauce.
- 34. Add the lime juice to the sauce.
- 35. Rinse the konjak spaghetti thoroughly.
- 36. Cook the konjak spaghetti for 2 minutes in boiling salted water.
- 37. Drain the konjak spaghetti.
- 38. Add the konjak spaghetti to the herb lime sauce.
- 39. Mix everything well.
- 40. Serve the noodles on plates.
- 41. Garnish the noodles with pine nuts.
- 42. Garnish the noodles with strawberries.
