🍽️ Fruity Compote of Gooseberries and Red Currants with Vanilla

Ingredients
- 0.5 vanilla pod
- 250 g green gooseberries
- 250 g red currants
- 100 g sugar
- 50 ml dry red wine
Instructions
- 1. Carefully split the vanilla pod lengthwise.
- 2. Scrape out the seeds from inside the pod with a knife.
- 3. Thoroughly wash the gooseberries and red currants under running water.
- 4. Pat the berries dry with a kitchen towel.
- 5. Remove any stems or unripe berries.
- 6. Place the berries, the vanilla seeds, and the empty vanilla pod into a pot.
- 7. Add the sugar.
- 8. Pour five tablespoons of water into the pot.
- 9. Add the wine.
- 10. Let the mixture simmer gently for about four minutes over medium heat.
- 11. Remove the pot from the heat.
- 12. Fill the warm compote into clean, well-rinsed jars.
- 13. Seal the jars tightly with lids.
- 14. Let the compote cool down completely at room temperature.
