  2. 2. Scrape out the seeds from inside the pod with a knife.
  3. 3. Thoroughly wash the gooseberries and red currants under running water.
  4. 4. Pat the berries dry with a kitchen towel.
  5. 5. Remove any stems or unripe berries.
  6. 6. Place the berries, the vanilla seeds, and the empty vanilla pod into a pot.
  7. 7. Add the sugar.
  8. 8. Pour five tablespoons of water into the pot.
  9. 9. Add the wine.
  10. 10. Let the mixture simmer gently for about four minutes over medium heat.
  11. 11. Remove the pot from the heat.
  12. 12. Fill the warm compote into clean, well-rinsed jars.
  13. 13. Seal the jars tightly with lids.
  14. 14. Let the compote cool down completely at room temperature.
