🍽️ Lime Ice Cream with Warm Coconut Waffles

Ingredients
- 1 untreated lime (zested peel)
- 5 limes
- 80 g sugar
- 80 ml white wine
- 1 egg white
- 100 g crème double
- 150 g soft butter
- 150 g sugar
- 4 eggs
- 250 g flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 4 tbsp coconut flakes
- 2 tbsp candied, finely chopped pineapple pieces
- pineapple juice
- oil (for the waffle iron)
Instructions
- 1. Put sugar and wine in a pot. Heat the mixture while stirring constantly until it boils. Remove the pot from the heat. Add the lime zest. Let the mixture cool down.
- 2. Squeeze all the limes. Beat the egg whites until semi-stiff. Lightly whip the cream double (sweet cream).
- 3. Add the lime juice to the cooled wine mixture. Stir everything well. Fold in the whipped cream double. Gently fold in the egg whites. Pour the mixture into a shallow metal bowl. Freeze the mixture in the freezer for about 4 hours. Stir the mixture repeatedly in between. (Alternatively: Use an ice cream machine).
- 4. Beat the butter with the sugar until fluffy. Stir in the eggs one by one until a smooth, airy mixture forms. Add flour, baking powder, cinnamon, candied pineapple, and coconut flakes. Mix everything with the dough hooks of the electric hand mixer. If the dough is too thick, stir in some pineapple juice. Preheat the waffle iron. Grease it with oil. Bake the waffles in it until golden yellow. Keep the finished waffles warm in the oven at 70 degrees.
