🍰 Coconut Rice with Fresh Blueberries

Ingredients
- 800 ml coconut milk
- 1 untreated lime
- 1 cinnamon stick
- 200 g milk rice
- 50 g rice syrup
- 200 ml soy cream
- 1 packet cream stabilizer
- 150 g blueberries
Instructions
- 1. Pour the coconut milk into a pot and place it on the stove.
- 2. Rinse the lime under hot water.
- 3. Thinly peel off the outer skin of the lime.
- 4. Add cinnamon and the lime peel to the coconut milk.
- 5. Bring the mixture to a boil.
- 6. Stir the rice into the boiling coconut milk.
- 7. Reduce the heat to low.
- 8. Let the rice simmer for about 30 minutes.
- 9. Stir the rice occasionally while it cooks.
- 10. Remove the pot from the heat.
- 11. Stir the rice syrup into the rice.
- 12. Let the rice cool down for about 15 minutes with the lid off.
- 13. Whip the soy cream with the cream stabilizer until stiff.
- 14. Gently fold the stiffly whipped soy cream into the rice.
- 15. Rinse the blueberries.
- 16. Pat the blueberries dry.
- 17. Stir the blueberries into the rice.
- 18. Divide the dish into bowls.
- 19. Serve the dish.
