🍰 Creamy rice with fresh strawberries

Ingredients
- 1 l coconut drink
- salt
- 250 g ORYZA (organic milk rice)
- 500 g strawberries
- 0.5 vanilla pod
- 4 sprigs lemon balm
- 0.5 organic lemon (zest and juice)
- 2 tbsp agave syrup
Instructions
- 1. Pour the coconut drink and a pinch of salt into a large pot (at least 3 liters capacity).
- 2. Add the milk rice and bring the mixture to a boil.
- 3. Stir the rice occasionally while it cooks.
- 4. Reduce the heat to low, cover the pot, and let the rice simmer gently for 20 minutes.
- 5. Stir the rice once after 10 minutes (halfway through the cooking time).
- 6. Stir the rice well after the full 20 minutes.
- 7. Wash the strawberries and remove the green tops.
- 8. Cut the strawberries lengthwise into quarters.
- 9. Slice the vanilla pod lengthwise in half.
- 10. Scrape the vanilla seeds out of the pod with a knife.
- 11. Wash the lemon balm and shake it dry.
- 12. Pluck the leaves from the stems.
- 13. Set aside a few leaves for garnish.
- 14. Chop the remaining lemon balm.
- 15. Mix the strawberries with the vanilla seeds, chopped balm, lemon zest, lemon juice, and agave syrup.
- 16. Stir the finished rice one more time.
- 17. Divide the rice into four bowls.
- 18. Top the rice with the strawberry mixture.
- 19. Sprinkle the bowls with the reserved lemon balm leaves.
- 20. Serve the dish immediately.
