🍽️ Crunchy Coconut Macaroons with Mango and Pineapple

Ingredients
- 100 g coconut flakes
- 50 g dried mango (chopped)
- 50 g dried pineapple (chopped)
- 3 egg whites
- 1 tsp lemon juice
- 140 g sugar
- 100 g shredded coconut
Instructions
- 1. Preheat the oven to 150 degrees Celsius. Set the heating function to top and bottom heat.
- 2. Put the coconut flakes into a freezer bag. Crush the flakes with a rolling pin until they are roughly broken down.
- 3. Whip the egg whites together with the lemon juice until stiff. Stir in the sugar slowly until the mixture is white, glossy, and firm.
- 4. Gently fold in the crushed coconut shavings, the remaining coconut flakes, the pineapple, and the mango.
- 5. Form small mounds using two teaspoons. Place them on a baking sheet lined with baking paper.
- 6. Bake the macaroons in the preheated oven for about 25 minutes.
