  1. 1. Rinse the lime under hot water and pat it dry.
  2. 2. Finely grate the lime zest.
  3. 3. Mix the lime zest with the coconut flakes and flour in a bowl.
  4. 4. Squeeze the lime and reserve exactly 1 teaspoon of juice.
  5. 5. Separate the eggs and use the yolks for another purpose.
  6. 6. Beat the egg whites, salt, and lime juice with a hand mixer until stiff.
  7. 7. Slowly pour in the sugar and continue beating until glossy stiff peaks form.
  8. 8. Gently fold the coconut-flour mixture into the egg whites using a rubber spatula.
  9. 9. Line a baking tray with baking paper.
  10. 10. Place the wafer biscuits on the tray, leaving about 5 millimeters of space between them.
  11. 11. Fill the mixture into a piping bag fitted with a large round tip.
  12. 12. Pipe the mixture onto the wafers, leaving a small border around the edge.
  13. 13. Let the macaroons dry at room temperature for 6 hours.
  14. 14. Preheat the oven to 175 degrees Celsius conventional heat (150 degrees Celsius fan or gas mark 2).
  15. 15. Bake the macaroons on the second rack from the bottom for 8 to 12 minutes until lightly browned.
  16. 16. Let the finished macaroons cool on a wire rack.
