  1. 1. Whisk the egg yolks with the sugar over a pot of hot water until creamy. Gradually stir in the coconut milk, let the mixture cool down while stirring constantly, then mix in the coconut liqueur. Gently fold in the very stiffly whipped cream.
  2. 2. Pour the mixture into a parfait mold or a small loaf pan lined with plastic wrap. Smooth the surface and freeze in the freezer compartment for about 3 hours.
  3. 3. Slice the ice cream as desired for serving. Insert a stalk of lemongrass into each slice and roll them in coconut flakes.
