🍽️ Creamy Coconut Ice Cream with Mango Garnish

Ingredients
- 400 ml Milk
- 400 ml Coconut milk (can)
- 150 g Sugar
- 1 tbsp Cornstarch
- 100 g freshly grated coconut (or 80 g coconut flakes)
- 2 tbsp roasted peanuts
- 1 Mango
- 1 Starfruit
Instructions
- 1. Take a small splash of the milk and stir in the starch until no lumps remain.
- 2. Add the remaining milk, condensed milk, coconut milk, and sugar to a pot.
- 3. Heat the milk mixture on the stove until it boils.
- 4. Stir the starch-milk paste into the hot milk while whisking constantly.
- 5. Let the mixture come to a brief boil again.
- 6. Remove the pot from the heat and let the mixture cool down completely.
- 7. Gently fold the shredded coconut flakes into the cooled mixture.
- 8. Pour the mixture into an ice cream maker and let it freeze.
- 9. If you do not have an ice cream maker, place the bowl in the freezer.
- 10. Stir the ice every 30 minutes until it is firm.
- 11. Spoon the finished ice cream into small bowls.
- 12. Roughly chop the peanuts and sprinkle them over the ice cream.
- 13. Slice the mango.
- 14. Garnish the portions with the mango slices and star fruit.
- 15. Serve the ice cream immediately.
