  1. 1. Heat the milk in a pot and add the coconut flakes. Bring the mixture to a boil.
  2. 2. Stir in the cornstarch until dissolved. Let the mixture boil briefly again.
  3. 3. Separate the eggs. Whisk the egg yolks in a separate bowl.
  4. 4. Soak the gelatin in cold water. Squeeze it out and dissolve it in the lukewarm coconut milk mixture.
  5. 5. Combine the coconut milk mixture with the whisked egg yolks. Stir well until fully combined.
  6. 6. Allow the egg yolk-coconut mixture to cool down completely.
  7. 7. Whisk the egg whites to stiff peaks. Gradually stir in the sugar while continuing to whisk.
  8. 8. Gently fold the egg whites into the cooled coconut mixture to keep it airy.
  9. 9. Fill the mousse into four small bowls.
  10. 10. Place the bowls in the refrigerator for 1 to 2 hours to let the mousse set.
  11. 11. Put coconut milk and vanilla sugar in a small saucepan. Warm the mixture while stirring, but do not boil.
  12. 12. Unmold the cold coconut mousse onto plates. Serve with the lukewarm coconut milk sauce.
