🍽️ Fluffy Coconut Mousse

Ingredients
- 50 g coconut flakes
- 50 g sugar
- 3 eggs
- 250 ml milk
- 1 tsp cornstarch
- 1 sheet white gelatin
- 1 can unsweetened coconut milk
- 1 packet vanilla sugar
Instructions
- 1. Heat the milk in a pot and add the coconut flakes. Bring the mixture to a boil.
- 2. Stir in the cornstarch until dissolved. Let the mixture boil briefly again.
- 3. Separate the eggs. Whisk the egg yolks in a separate bowl.
- 4. Soak the gelatin in cold water. Squeeze it out and dissolve it in the lukewarm coconut milk mixture.
- 5. Combine the coconut milk mixture with the whisked egg yolks. Stir well until fully combined.
- 6. Allow the egg yolk-coconut mixture to cool down completely.
- 7. Whisk the egg whites to stiff peaks. Gradually stir in the sugar while continuing to whisk.
- 8. Gently fold the egg whites into the cooled coconut mixture to keep it airy.
- 9. Fill the mousse into four small bowls.
- 10. Place the bowls in the refrigerator for 1 to 2 hours to let the mousse set.
- 11. Put coconut milk and vanilla sugar in a small saucepan. Warm the mixture while stirring, but do not boil.
- 12. Unmold the cold coconut mousse onto plates. Serve with the lukewarm coconut milk sauce.
