🍽️ Heavenly Coconut Mousse

Ingredients
- 500 ml whole milk
- 100 g coconut flakes
- 2 tbsp coconut flakes
- 6 sheets gelatin
- 1 tbsp cornstarch
- 5 egg yolks
- 3 egg whites
- 265 g powdered sugar
Instructions
- 1. Add the coconut flakes to the milk and bring the mixture to a boil.
- 2. Soak the gelatin in 3 tablespoons of cold water.
- 3. Whisk the egg yolks with 75 grams of powdered sugar.
- 4. Stir in the cornstarch and beat the mixture with a whisk until creamy.
- 5. Pour the still warm milk (including the coconut flakes) into the bowl and continue beating until well combined.
- 6. Pour the entire mixture into a pot and let it simmer over low heat for about 5 minutes.
- 7. Remove the pot from the heat and let the cream cool down.
- 8. Beat the egg whites until stiff peaks form.
- 9. Slowly pour in 80 grams of powdered sugar while beating.
- 10. Bring 250 milliliters of water to a boil in a separate pot.
- 11. Add the remaining powdered sugar and let the liquid caramelize over low heat.
- 12. Melt the drained gelatin over low heat in a small saucepan.
- 13. Add the caramel to the egg whites and beat vigorously until well combined.
- 14. Let the mixture cool down.
- 15. Gently fold in the cooled milk-coconut mixture.
- 16. Mix everything well and fill the mousse into prepared coconut shells (or small bowls).
- 17. Place the mousse in the refrigerator for 2 hours.
- 18. Garnish the finished mousse as desired.
