🍳 Refreshing Pineapple Coconut Smoothie

Ingredients
- 1 baby pineapple
- 200 ml coconut milk (1.9% fat; Tetrapak)
- 250 ml soy drink (soy milk) (1.2% fat; ice cold)
- 2 tsp chopped pistachio kernels
- Also: ice cubes
Instructions
- 1. Cut the pineapple into four equal quarters.
- 2. Take one of these quarters and cut off two thin strips. Set these strips aside, as they will be used for decoration later.
- 3. Take the remaining three quarters of the pineapple. Remove the hard core in the center and peel off the rough skin completely.
- 4. Cut the juicy flesh of the remaining pineapple into small, even cubes.
- 5. Place the pineapple cubes into a tall, narrow container large enough to fit a hand blender.
- 6. Pour the coconut milk and the ice-cold soy drink over the pineapple cubes in the container.
- 7. Blend the mixture with a hand blender until it is completely fine and smooth. Make sure no large chunks remain.
- 8. Pour the finished smoothie into two drinking glasses. Add ice cubes as desired to make it even colder.
- 9. Garnish the glasses with the pineapple strips set aside earlier and sprinkle chopped pistachios on top.
- 10. Serve the smoothie immediately and enjoy it fresh.
