🍰 Coconut-Chocolate Ice Pops with Chia Seeds

Ingredients
- 400 ml coconut milk
- 4 tbsp maple syrup
- 15 g cocoa powder (2 tbsp; highly defatted)
- 2 bags chai tea
- 12 g white chia seeds (2 tbsp)
- 250 g soy yogurt
- 30 g dark chocolate (min. 70% cocoa content)
Instructions
- 1. Pour the coconut milk into a pot.
- 2. Add the maple syrup and the cocoa powder.
- 3. Heat the mixture, but do not let it boil.
- 4. Hang the tea bags into the warm liquid.
- 5. Cover the pot.
- 6. Remove the pot from the heat.
- 7. Let the mixture steep for 30 minutes.
- 8. Remove the tea bags.
- 9. Squeeze the tea bags to release the liquid into the mixture.
- 10. Stir in 1 1⁄2 tablespoons of chia seeds.
- 11. Stir in the yogurt.
- 12. Fill the mixture into 8 ice pop molds.
- 13. Let the molds freeze in the freezer for about 1 hour.
- 14. Insert the wooden sticks into the ice pop molds.
- 15. Let the ice pops freeze for another 3 hours.
- 16. Chop the chocolate roughly.
- 17. Melt the chocolate over a warm water bath.
- 18. Carefully remove the ice pops from the molds.
- 19. Dip the ice pops into the melted chocolate.
- 20. Sprinkle the remaining chia seeds over the ice pops.
